Made with barley grass grown in Japan (Kyushu), with no chemosynthetic agrochemicals or chemical fertilizers. Barley grass grows best in areas with wide ranging temperatures, making the wide open expanses of Kyushu perfect for barley grass cultivation. In this ideal climate, the farmers take great care to make great soil. During cultivation, absolutely no chemically synthesized agrochemicals are used, and the soil is carefully tilled by tractor with compost. Seeds are also painstakingly placed under careful climate observation to prevent spread of disease and weeds.

In order to process the ingredients on the same day while still fresh, harvesting is done in the early morning. To prevent dead grass and dirt from getting mixed in, the grass is cut by hand with a mower down to a height of approximately 10cm. People work in groups to cut the barley grass quickly, get it packed up on a truck, and ship it off.

Harvested barley grass is immediately taken to the nearest factory for preliminary processing. The grass is washed, cut, and then steamed. This process is very important in both sterilizing the grass and preserving its nutrients. The grass is then allowed to dry for six hours after it has reached its greenest hue. Each step of this process is extremely important in the quality of the final product. Each step must be done with utmost care. Because each producer has a direct connection to a factory, the grass can be processed very soon after harvest, thereby preserving the nutrients and brilliant green color of the barley grass.

"Grass of Longevity" from Okinawa's Yonaguni Island
"Grass of Longevity," called chomeiso and botanbofu in Japanese, is a wild grass grown on Yonaguni Island, the westernmost point in Japan. The grass normally grows on the rocky outcrops and cliffs of the island. In the fields where the grass of longevity is cultivated, weeding takes 14 hours a day, and to keep the conditions for cultivation as close to natural as possible, the fields are watered with seawater once a month. The minerals from the seawater turn into nutrients that help protect the leaves from disease. The grasses contain plenty of vitamins and polyphenols, and are said to "give you an extra day of live for each plant you eat." This plant is said to be the secret to the long, robust lives of the residents of Yonaguni Island.

We tried many different methods to get a smoother texture, and found that finely grinding the main ingredient – the barley grass – was key. A finer powder makes it easier to dissolve in both hot and cold water, making for a tastier, easier to drink aojiru.
